10 MinGreat, healthy low-fat snack. Use as you would potato chips or can be served with dips, like carmelized onion dip or an herb dip.It is a nice cocktail hour treat. Guests break off pieces, like crackers, or you can make them small enough to put it in your mouth.A large one makes a nice garnish for a salad.While still soft, you can press into a mini muffin tin to make a cup. If the cheese firms up too quickly, return to the oven for a minute to soften.

- Preheat oven to 375 o F.
- Shred cheese of choice on the coarse part of a box grater. Sprinkle a very thin layer on a non-stick sheet like Silpat or parchment paper. You can use a circular cookie cutter as a form in which to spread the cheese and don’t worry about holes because the cheese will spread as it melts. Add toppings if you wish and bake for 5 or 6 minutes, until the cheese is bubbling, and starts to look dry and takes on a light golden color. Don’t let them get too dark.
